What is Comte?
Known as one of the finest melting cheeses in the world, Comte is an unpasteurized cows milk cheese that gives off a fruity, nutty, salty, savory, smokey and sweet flavor (all depending on the age of the wheel). The texture of Comte also changes with age however is commonly dense, firm, grainy, open and smooth.
Where Does Comte Come From?
Comte comes from the mountains of Jura in eastern France, where the cows are free roaming and feast on fresh grass.
What Cheeses compare to Comte?
Gruyere strongly resembles Comte with its identical texture and taste, presenting stronger tones of butter and hazelnut. Another cheese that resembles Comte is Fontina, which boasts mild tones of browned butter and roasted nuts, with a dense texture ideal for melting.
